I hope you like gingerbread, because these are the best that I've found anywhere! The first one is a great structural gingerbread recipe if you're building things like The Burrow or Platform 9 3/4. 

GREAT STRUCTURAL GINGERBREAD RECIPE HERE - includes videos and tips, otherwise, I'd just be copy-pasting.

 

This one is the soft gingerbread variety, which you can decorate, too, if you like. I usually just add double the spices to the structural recipe and then make tiny stars out of it and dunk it in my tea. But this is the chewy kind, where you don't have to soak it to get your teeth into it.

Holiday Greetings, @ineffable_season!

I know you have your hands full with an active little person this year, so I selected a nut-free sugar cookie that is also AMAZING for cut-outs with your special kid! This dough, man. Doesn't require chilling. Holds up to the most fussy designs (think detailed snowflake cookie cutter with those delicate edges). Just watch the thickness when you roll it out. Too thin will burn. Also, personal tip: take your time with the baking. Get it that almost golden color (put it back in if it's too too white). Then when it cools, it's nice and firm for handling. 

I like to bake my decorating cookies on one day, and then decorate them on a different day, just because I love making a mess with the icing. These store extremely well in a tight-fitting container, and people tell me they are the best tasting decorated cookie they've ever had. Maybe it's because I use double the vanilla...

I've been using this one for DECADES.

Hi Di! 

Happy December! My mom used to make these cookies every year when it got cold out (Christmastime). These cookies always took the longest, and it's not because they're the most difficult cookie. They're actually really easy. You just have to be patient. I remember staring at the oven for what I thought was HOURS, and my mom would still say, "They're not done yet. We'll just turn the oven off and let them sit overnight."

You don't actually have to do that, (the overnight thing) but I bet you might have guessed I'm talking about meringues.

The cookie. Not that other thing. I figured since you wanted something gluten free, the best thing to do would be find a recipe that was meant to not have any gluten in it. Meringues were designed like this, so no substitutions necessary!

Sooo... it says "Stand Mixer", and I guess if you have one, that's great. I've never owned a stand mixer, but mine come out just fine!  I will admit that I have ALL THE WILTON TIPS, but you don't even need the special tip. For a piping bag in a pinch, you can GO HERE and roll your own out of parchment paper, but if you're really lazy like my neighbor, just fill a gallon ziploc bag with the stuff and clip off a corner with scissors. Make it a rather large opening, about half the size of the cookie you want.
